About The Company
Allen Bread Company is committed to providing the highest quality bread products available in the Montgomery County area. We use only stone ground flour from Castle Valley Mills in Doylestown, PA for all of our products and 100% wild sourdough to rise the bread, bagels and pretzels. Castle Valley Mills uses a stone grist mill for all of its milling and a traditional bolting procedure to refine their flour, where the milled flour is passed through a rotating metal screen to remove some of the larger flakes of bran. These two processes together conserve much more of the natural complex flavor and nutrition of wheat flour when compared to large-scale steel roller mills that refine their flours to an extent where much of the nutrition and flavor is lost for the sake of a pure high-gluten product.
Our sourdough products are risen with a wild sourdough culture that is never cut with commercial strains of instant or bakers yeast. This results in a long fermentation time that allows added flavor and textural complexity with the characteristic bright fruity notes of sourdough
